All About Food - Southern Fried Chicken
…Because I am all about food. Any month is the perfect month to make a mess of Southern Fried Chicken. Mess meaning a lot. Prepare this early in the day and serve it with potato salad and fresh fruit for a wonderful alfresco dining experience. To get the full southern tastes have plenty of sweetened iced tea or lemonade to quench your thirst.
Southern Fried Chicken
Serves 6
Chicken pieces
2 to 3 eggs
Water
2 to 3 cups Peanut oil
2 to 3 cups flour
Salt and pepper, to taste
Wash chicken and set aside. Whisk eggs and 1 tablespoon of water per pound of chicken together in a large bowl. Place chicken in egg mixture to rest while heating oil. Place flour in a brown paper bag and add chicken. Shake vigorously. Start by adding dark pieces of chicken to the middle of the skillet. Then place the rest of chicken around the outside. Allow pieces to brown at least 2 to 3 minutes, then turn and brown on the other side. (Use tongs to turn.) Cover pan and reduce heat to medium. Let chicken cook on one side for 10 minutes, turn chicken to other side, cover and cook for another 10 minutes. Remove cover and turn heat to high and cook for 1 more minute. Place chicken on a wire rack to drain. Generously season with salt and pepper immediately after removing from skillet.
